Sautéed Leeks with Lentils and Swiss Chard Recipe

Ingredients:


- 2 medium ForestFoods leeks, trimmed and cleaned

- 1 bunch ForestFoods yellow Swiss chard, stems removed and chopped, leaves roughly chopped

- ½ cup dried green or brown lentils (or 1 can, drained and rinsed)

- ¼ cup extra virgin olive oil

- 1 teaspoon cumin seeds

- 2 tablespoons Dijon mustard

- 1 teaspoon honey (or maple syrup for a vegan option)

- 1 tablespoon fresh lemon juice

- 2 cloves garlic, minced

- Salt and pepper to taste

- Optional: Crumbled feta or goat cheese for serving (non-vegan option)


Instructions:


1. Cook the Lentils

   Start by rinsing the lentils. Place them in a pot with 1 ½ cups of water and bring to a boil. Lower the heat to a simmer, cover, and cook for about 20 minutes until tender. Drain and set aside. If using canned lentils, rinse and drain them.


2. Prepare the Leeks and Swiss Chard

   Slice the white and light green parts of the leeks into ¼-inch rounds, then rinse thoroughly to remove dirt. Separate the Swiss chard stems from the leaves. Chop both, keeping them separate.


3. Sauté the Leeks

Heat 2 tablespoons of olive oil in a large pan over medium heat. Add cumin seeds and sauté for 30 seconds. Add the leeks and cook for about 5-7 minutes until softened and fragrant.


4. Add Garlic and Chard Stems

Stir in the minced garlic and the Swiss chard stems. Cook for another 3 minutes until the stems begin to soften.


5. Add Lentils and Chard Leaves

Add the cooked lentils to the pan along with the chopped Swiss chard leaves. Sauté for 4-5 minutes until the chard wilts and everything is mixed well.


6. Prepare the Dressing

In a small bowl, whisk together Dijon mustard, honey, lemon juice, and the remaining olive oil. Season with salt and pepper to taste.


7. Combine and Serve

Pour the dressing over the sautéed leeks, lentils, and chard. Toss gently to combine and adjust seasoning if needed. For an extra touch of richness, top with crumbled feta or goat cheese. Enjoy!
