Savory Sautéed Leeks with Mustard and Cumin



When you think of Italian cooking, your mind might jump to fresh pasta, vibrant tomatoes, or creamy risottos. Today, we’ll talk about an Italian nutritious powerhouse we don’t talk nearly enough about - the Italian leek.


Sweet and tender, they elevate soups, sautés, and even pasta sauces! This week, we’re showing you a simple yet sophisticated recipe that combines leeks with mustard and cumin. Let’s go!


Prep Time: 10–15 minutes

Cooking Time: 10 minutes

Total Time: 20–25 minutes

Yield: 2 cups


Ingredients


  • 2 medium-size leeks

  • ¼ cup extra virgin olive oil, preferably unfiltered

  • 1 teaspoon cumin seeds

  • 2 tablespoons prepared mustard

  • 1 teaspoon honey


Steps


  1. Trim the bulb ends of the leeks to remove their tiny rootlets.

  2. Trim the tops of the leaves, leaving three inches of dark green above the white.

  3. Cut the leeks into quarters lengthwise, then rinse well to remove any dirt.

  4. Beginning at the root end, slice the white part of the leeks crosswise into ¼-inch slices, then slice the green portion into narrower, ⅛-inch slices

  5. Combine the oil, cumin seeds, and green portions of the leeks in a medium frying pan.

  6. Sauté over medium-low heat for 2 minutes, then add the white portions of the leeks and cook for another 8 minutes.

  7. Stir frequently.

  8. Add the mustard and honey and sauté over low heat for another 2 minutes. Serve hot, cold, or at room temperature.
