Leeks: The Sweet Onion’s Sophisticated Cousin
Leeks are the quiet achievers of the vegetable world. Milder than onions, silkier than scallions, and elegant enough to be the centerpiece of a dish. This week, we’re shining the spotlight on them, because they’re more than just a background flavor, they’re a star in their own right.
Why Leeks Deserve the Love
Leeks are packed with vitamin K, folate, and antioxidants, all crucial for bone strength, heart health, and protecting your cells. They’re also high in prebiotic fiber, which feeds the friendly bacteria in your gut and keeps digestion humming along.
And here’s a fun one: in medieval times, leeks were thought to bring good luck and protection. Welsh soldiers even wore them in their hats before going into battle. If that’s not a vegetable with character, what is?

Recipe: Leek, Fennel & Chard Gratin
This recipe turns your veg box stars; leeks, fennel, and rainbow chard into a creamy, golden dish that feels both indulgent and nourishing. Perfect for a Sunday table or as a vegetarian main.
Ingredients (serves 4):
4 baby leeks (or 2 large leeks), trimmed and sliced lengthwise
1 fennel bulb, thinly sliced
2 handfuls rainbow chard, stems chopped, leaves torn
2 cloves garlic, minced
1 cup milk (or oat milk)
½ cup cream (optional)
½ cup grated cheese (cheddar, parmesan, or gruyère)
2 tbsp olive oil or butter
Fresh herbs (dill or parsley from your box)
Salt and pepper, to taste
Method:
Preheat the oven to 180°C (350°F).
In a pan, sauté garlic, fennel, and leeks in olive oil until soft and fragrant (about 8 minutes). Add chard stems, cook 3 more minutes, then fold in leaves to wilt.
Transfer to a baking dish. Pour milk and cream over, season well.
Top with cheese and bake for 25–30 minutes until golden and bubbling.
Serve with a crisp side salad of lettuce and fresh herbs for balance.
