About the Recipe
This recipe brings together the vibrant bounty of our syntropic agroforestry systems, transforming nutrient-rich greens and herbs into crisp, golden fritters. Featuring spinach, coriander, and chives, these fritters are naturally high in vitamins A, C, and K, alongside essential minerals like iron and calcium - supporting a wholesome, plant-forward diet. Paired with a tangy rhubarb dip, rich in antioxidants and fiber, this dish nourishes both body and palate. It's a simple yet flavorful way to enjoy the seasonal diversity nurtured by regenerative farming practices, straight from soil to table.
Ingredients:
For the Fritters:
2 cups finely chopped ForestFoods spinach
1 cup finely chopped coriander
1 cup finely chopped ForestFoods chives
1 cup finely chopped ForestFoods mint
3 eggs
¾ cup milk
1½ cups all-purpose flour
1½ tsp baking powder
1 tsp kosher salt
½ tsp black pepper
1 cup shredded mozzarella cheese
½ cup shredded parmesan cheese
Vegetable oil, for frying
For the Tangy Rhubarb Dip:
2 cups chopped ForestFoods rhubarb
½ cup water
⅔ cup sugar (adjust to taste)
1 tsp lemon juice
½ tsp vanilla extract (optional)


Instructions:
For the Fritters:
In a large bowl, whisk together the eggs and milk.
Add the chopped herbs, flour, baking powder, salt, pepper, mozzarella, and parmesan. Mix until well combined.
Heat vegetable oil in a frying pan over medium heat.
Scoop spoonfuls of the batter into the pan, flattening slightly.
Fry for 2–3 minutes on each side until golden brown.
Remove and drain on paper towels.
For the Tangy Rhubarb Dip:
In a saucepan, combine rhubarb, water, and sugar. Bring to a boil.
Reduce heat and simmer for 10–15 minutes until rhubarb is soft.
Add lemon juice and vanilla extract. Stir well.
Allow to cool slightly, then blend until smooth.
