About the Recipe
This plant-based main is all about showcasing cauliflower in its most impressive form. Thick slices are roasted until golden, bringing out the vegetable’s natural nuttiness. Garlic provides a robust savory flavor, while fresh dill adds a bright, aromatic lift. Cauliflower is a rich source of vitamin C and fiber, supporting immune health and digestion. Dill, beyond flavor, offers antioxidants and flavonoids linked to heart and anti-inflammatory benefits. This dish is light, nourishing, and packed with texture, crispy edges, tender centers, and herbaceous notes.
Ingredients
1 medium ForestFoods cauliflower (cut into thick steaks)
2–3 cloves garlic, minced
2–3 tbsp olive oil
Fresh ForestFoods dill, finely chopped
Juice of ½ a lemon
Salt and pepper, to taste
Your favourite spices i.e paprika, cumin or forestfoods sun kissed seasonal blend, for a spicy kick (optional)


Instructions
Preheat the oven to 220°C (425°F).
Trim cauliflower base and slice into thick 1.5–2cm steaks.
In a small bowl, mix olive oil, minced garlic, and lemon juice.
Brush both sides of each cauliflower steak with the garlic-oil mixture.
Arrange on a lined baking sheet. Roast until edges are golden and centers are tender when pierced with a fork, about 25–30 minutes.
Sprinkle with chopped dill and season with salt and pepper or your favorite spices. Serve warm.
