The blend, made from dehydrated beetroot, carrots, leeks, celery, and thyme, adds layers of earthy umami without any additives. Ingredients:


  • 2 tbsp olive oil

  • 1 large ForestFoods  leek (white and tender green parts), sliced

  • 2 celery stalks, diced

  • 2 ForestFoods rainbow carrots, chopped

  • 1 medium ForestFoods beetroot, peeled and cubed

  • 2 ForestFoods potatoes, cubed

  • 4 cups (1 L) water

  • 2 tsp ForestFoods Root Nourish Blend (adjust to taste)

  • 1 tsp fresh (or ½ tsp dried) thyme leaves

  • Salt & black pepper, to taste

  • OPTIONAL: a handful of chopped parsley for garnish

Instructions:


  1. Heat olive oil in a large pot over medium heat. Add leek and celery; sauté ~5 min until soft.

  2. Stir in carrots and beetroot; cook ~3 min until lightly golden.

  3. Add potatoes, water (or broth), Root Nourish Blend, and thyme; bring to boil.

  4. Reduce heat, simmer uncovered 25–30 min until vegetables are tender.

  5. Season with salt and pepper. Optionally, blend half the soup for creaminess, keeping texture.

  6. Serve hot, topped with parsley.
