About the recipe

This vibrant raw slaw lets Chioggia beetroot be the undeniable centerpiece. Known for its candy-striped interior and subtly sweet flavor, this heirloom beet is lightly marinated to enhance its natural brightness. It’s supported by delicate beet leaves and a handful of shaved baby carrots for crunch and color contrast. Rich in antioxidants and nitrates, beets support blood flow and heart health. Beet greens add iron and fiber, while parsley introduce vitamins A, K, and C. The lemon-honey vinaigrette lifts the natural flavors without overpowering.


Ingredients

  • 4 medium Chioggia beets, peeled and thinly sliced or spiralized

  • ½ cup baby carrots, peeled and julienned

  • 1 cup beet greens and spinach, finely chopped (optional)

  • 2 Tbsp chopped parsley or coriander


  • For the vinaigrette:

    • Juice of 1 large lemon (≈ 3 Tbsp)

    • 1½ Tbsp honey or maple syrup

    • 2 Tbsp extra-virgin olive oil

    • Salt and pepper to taste

Instructions

  • Peel and thinly slice or spiralize the Chioggia beets. Place in a bowl with a pinch of salt.

  • In a small jar or bowl, whisk together the lemon juice, honey, olive oil, salt, and pepper.

  • Pour ¾ of the vinaigrette over the beets and let marinate for 30 minutes at room temperature.

  • Meanwhile, prep the carrots, spinach, and beet greens.

  • Just before serving, toss in the greens, carrots, and chopped herbs with the beets and remaining dressing.

  • Serve chilled or at room temperature, garnished with extra parsley.
