About the Recipe
This layered dish combines roasted butternut squash and hearty lentils, finished with a creamy, herb-infused yogurt sauce featuring coriander. It's comforting, nutritious, and visually vibrant, perfect for seasonal menus or as a share-worthy side.
Ingredients
Roasted Squash & Lentils:
1 medium ForestFoods butternut squash, peeled, seeded, and cubed, or opt for the convenient alternative: our fresh-cut butternut squash cubes (250g).
2 tbsp olive oil
Salt and pepper, to taste
Optional spices: ½ tsp cumin, ½ tsp paprika, a pinch of ForestFoods fire dust seasoning and/or red chili flakes
1 cup cooked green or brown lentils (French green lentils ideal)
Coriander-Yogurt Sauce:
1 cup plain yogurt (Greek or plant-based)
2–3 tbsp fresh ForestFoods coriander, finely chopped
1 tsp lemon or lime juice (optional, for brightness)
Salt, to taste

Instructions
Preheat your oven to 200 °C (400 °F).
Toss butternut squash cubes with olive oil, salt, pepper, and optional spices; spread on a baking sheet.
Roast for 25–30 minutes, until tender and caramelized at the edges.
Meanwhile, mix yogurt with chopped coriander, lemon/lime juice (if using), and a pinch of salt in a small bowl; set aside.
Warm cooked lentils gently on the stove or in the microwave. Season lightly, if desired. If cooking from dry lentils, rinse ½ cup lentils and simmer in water or stock for 20–25 minutes until tender, then drain. For extra depth of flavor, you can use our ForestFoods Nourish Root Stock Powder and season with a pinch of salt.
To serve: Spread a spoonful of coriander-yogurt on each plate (or drizzle over), add roasted squash and lentils, and garnish with extra coriander sprigs.
