Crispy White Radish & Beetroot Slaw: A Fresh, Crunchy Delight

A vibrant slaw of daikon, beetroot, and carrots tossed in a light sesame dressing.

Recipe Details

  • Yields: 4 servings

  • Prep Time: 20 minutes

  • Cook Time: None (raw preparation)

About the Recipe

This crisp and colorful slaw brings together white radish (daikon), beetroot, and carrot in a refreshing combination. Daikon offers a peppery crunch, beets contribute earthy sweetness and deep color, while carrots balance the flavors with familiar freshness. Tossed in a sesame–red wine vinegar dressing, the result is both nourishing and satisfying.

Nutritionally, raw root vegetables like these are an excellent source of dietary fiber (important for digestive health) and antioxidants like vitamin C and betalains (from beets), which may help reduce oxidative stress (National Library of Medicine). Eating them raw helps retain more of these valuable compounds compared to cooked preparations.
