Radicchio, is part of the Chicory family, and is a deligtful leafy green eaten raw or cooked. When eaten raw Radicchio has been described as a bit bitter and slightly spicy, but when cooked the bitterness tends to lessen.
We love using Radicchio when making canape's! Here is recipe idea that is quick and easy to put together for everyone to enjoy!
Ingredients
ForestFoods Radicchio
Parma ham finely cut
Brown's Herby Goat Cheese crumbled into small bits
Ginger, ForestFoods carrot and soy dip
Boiled Sweet potato cubes
Raw ForestFoods Swiss Chard chopped fine
Salt & Pepper
Yellow Tamalu Cherry Tomatoes
Method
Break off the Radicchio leaves as you would a head of lettuce and place them on a serving tray
Follow the ForestFoods Wild Rocket Pesto recipe to make the pesto
In a blender, blend together two ForestFoods carrots, roughly a thumb size of ginger and 30ml soy sauce to make the dip
Boil the sweet potato until soft to then chop into cubes - let it cool down
Place the bits of parma ham, sweet potato, and chopped up Tamalu cherry tomatoes, and the chopped up swiss chard on the raddichio leaves.
Sprinkle the herby goat cheese crumbles on top of the above ingredients
Sprinkle about a table spoon of the pesto as well as the dip on the mixture above
Add a teaspoon of macadamia oil over each leaf mixture
Add salt and pepper for seasoning and
