This vibrant green soup combines sweet fennel and fresh spinach, delivering an iron-rich, antioxidant-packed bowl that's both nourishing and elegant. Fennel offers a gentle aniseed flavor and is an excellent source of potassium, fiber, vitamin C, and anti-inflammatory phytonutrients. Spinach adds iron, vitamin K, and folate. The result? A silky, low-calorie soup that promotes digestive health and immunity .



Ingredients:


  • 1 medium ForestFoods fennel bulb, trimmed and thinly sliced

  • 1 large bunch (about 4 cups packed) ForestFoods fresh spinach

  • 1 medium onion, diced

  • 2 celery stalks, chopped

  • 2 Tbsp olive oil

  • 4 cups vegetable broth (plus extra if needed)

  • Salt & black pepper, to taste

  • Fresh curly parsley or fennel fronds, for garnish

Instructions:


  1. Sauté base: In a large pot over medium heat, warm the olive oil. Add onion, celery, and sliced fennel; cook until softened (~5 min).

  2. Add broth: Pour in the vegetable broth, bring to a simmer, and cook for ~10 minutes.

  3. Blend greens: Add spinach and cook until wilted (~2 min). Puree the mixture until smooth using an immersion or countertop blender.

  4. Season: Return to pot if needed, warm through, and season with salt and pepper.

  5. Serve: Ladle into bowls and garnish with fresh parsley or fennel fronds.
