Ingredients:
Your favorite fish fillet (such as salmon, tilapia, or cod)
2 ForestFoods leeks, sliced
2 spring onions, chopped
3 cloves garlic, minced
1 cup ForestFoods rainbow chard, chopped

1 courgette, sliced
1 cup ForestFoods broccoli, cut into florets
1 celery stalk, chopped
10 cherry tomatoes, halved
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1 lemon or grapefruit, sliced
1/2 tsp chili powder, or to taste
2 tbsp olive oil
1/2 tsp dried thyme or oregano (optional for added flavor)

Instructions:
Preheat the oven to 200°C (400°F).
Prepare the ingredients: Wash and cut all vegetables into bite-sized pieces. Slice your fish fillet into manageable portions.
Assemble the envelope: Lay a large piece of aluminum foil on a flat surface. Place the fish fillet in the center and season with salt, pepper, chili powder, and optional dried herbs.
Layer the veggies: Drizzle olive oil over the fish and top with leeks, spring onions, garlic, chard, carrots, courgette, broccoli, celery, and cherry tomatoes.
Add citrus: Place a few slices of lemon or grapefruit on top to infuse the dish with bright, zesty flavors.
Seal the envelope: Fold the aluminum foil tightly around the fish and vegetables, ensuring all juices, flavors, and heat remain enclosed.
Bake: Place the foil packets on a baking tray and bake for 20-25 minutes.
