About the Recipe


Artichokes are a powerhouse of nutrition. They're rich in polyphenols, which help combat oxidative stress, and contain inulin, a prebiotic fiber that supports gut health. This grilled artichoke recipe enhances their natural flavors with a garlicky-lemony marinade that doubles as a dipping sauce, making it both delicious and healthful.





Ingredients:


  • 2 large globe ForestFoods artichokes

  • 2 lemons (halved)

  • ¼ cup extra virgin olive oil

  • 4 garlic cloves, minced

  • ¼ cup fresh parsley, finely chopped

  • ½ teaspoon red pepper flakes

  • salt, to taste

Instructions:


  1. Prepare the Artichokes:

    • Fill a large bowl with water and squeeze in the juice of one lemon; add the squeezed halves to the water.

    • Trim the artichokes: Cut off the top inch of the artichoke and trim the stem to about an inch. Remove the tough outer leaves and snip the sharp tips of the remaining leaves.

    • Cut the artichokes in half lengthwise and remove the fuzzy choke with a spoon.

    • Immediately place the halves in the lemon water to prevent browning.

  2. Steam the Artichokes:

    • Fill a large pot with about 2 inches of water and insert a steamer basket.

    • Bring the water to a boil, place the artichokes cut-side down in the basket, cover, and steam for about 15 minutes until just tender.

    • Remove and let cool slightly.

  3. Prepare the Marinade:

    • In a bowl, whisk together the juice of the remaining lemon, olive oil, minced garlic, chopped parsley, red pepper flakes, and a pinch of kosher salt.

  4. Marinate the Artichokes:

    • Place the steamed artichokes in a shallow dish and pour half of the marinade over them, ensuring they're well-coated.

    • Let them marinate for at least 10 minutes.

  5. Grill the Artichokes:

    • Preheat a grill to medium-high heat.

    • Place the artichokes cut-side down on the grill and cook for about 5 minutes until charred and smoky.

    • Flip and grill the other side for an additional 2-3 minutes.

  6. Serve:

    • Transfer the grilled artichokes to a serving platter.

    • Drizzle with the remaining marinade and serve warm.
