How to make nutrient dense, healthy ForestFoods Beetroot Burgers

ForestFoods beetroot burgers are a delicious and nutritious meal for the entire family to enjoy! Whether you couple the beetroot burger with a burger bun or with a fresh crunchy ForestFoods mixed salad, it is a great meal to share with the whole family!


  • 400g raw ForestFoods beetroot, peeled and coarsely grated

  • Small bunch ForestFoods spring onions, finely chopped

  • 2 garlic cloves, crushed

  • Small bunch ForestFoods fresh mint, chopped

  • Finely grated zest and juice 1 lemon

  • 3 tbsp plain flour

  • 1 medium ForestFoods egg

  • 200g feta, crumbled

  • 5 tbsp olive oil

  • 200g ForestFoods mixed salad leaves


  • Start by squeezing as much liquid out of the grated beetroot as possible (best done by wrapping in a cloth and squeezing the liquid out as much as possible)

  • In a large bowl, mix the beetroot, spring onions, garlic, mint, lemon zest, half the lemon juice, 2 tbsp of the flour and the egg. Add salt and pepper for seasoning and taste. Now add in the feta and mix until all is well combined.

  • Form the mixture into 4 burger-shaped patties and coat with the remaining flour. Heat a large frying pan over a medium-high heat with 3 tbsp olive oil and fry the patties for 4-5 minutes on each side until crisp on the outside and cooked through.

  • Mix in the remaining oil and lemon juice with a pinch of salt and pepper and toss with the mixed salad leaves. You can serve these burgers on their own with burger buns and or with the mixed lettuce salad.
