This is simple and highly nutritious recipe for everyone to enjoy. High in protein, this recipe is also very versatile in that you can add or swap in a variety of other vegetables. Your choice!
Ingredients
1 cup cooked Naturalli Kenya quinoa
½ head of ForestFoods cauliflower
½ head of ForestFoods broccoli
few stalks of ForestFoods Baby Leeks
2 pasture raised ForestFoods eggs
¼ tsp pepper
⅓ cup Brown's Food Co. goat cheese crumbles
½ tsp salt
⅓ tsp toasted Tropical Heat cumin powder
3 tbsp Onja Foods chickpea flour
1 tbsp brown rice flour
4 -5 tbsp of Pure Mountain Kenya canola oil for pan frying
Method
Cook the quinoa with vegetable stock or water and let it cool. Set aside.
Using a blender or food processor, pulse the broccoli, and cauliflower to a very fine mince. Add it to the cooled quinoa.
Mix in the remaining ingredients for the burgers except for the canola oil. Using your hands, mix well and let it sit on the counter top for 15 minutes.
Grab a small hand full of the mix and make into round balls and set them our equal spacing on wax paper lined baking tray. Now gently with a spatula press them down and shape them into burgers.
You can freeze them for sometime(an hour to two) or make burgers immediately.
Take a flat bottomed cast iron pan or non stick pan. Let it get hot. Add a tbsp of canola oil. Slide the patties in the oil, cook on medium heat for about 2 minutes on each side or until crispy. Take it out on a cooling rack.
