Whole Roasted Cauliflower Recipe: A ForestFoods Delight

Cauliflower is a superstar vegetable known for its high fiber content and impressive nutrient profile, including vitamins C, K, and B6. Roasting it whole not only retains its nutrients but also enhances its natural flavor. Ingredients:

  • 1 large head of cauliflower (from your ForestFoods veg box)

  • 3 tablespoons olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon smoked paprika

  • 1 teaspoon turmeric

  • 1/2 teaspoon sea salt

  • Freshly ground black pepper, to taste

  • 1 lemon (juice and zest)

  • Fresh herbs (parsley, coriander, or thyme) for garnish


Optional Toppings:

  • Tahini drizzle

  • Pomegranate seeds

  • Toasted nuts or seeds for crunch


Instructions:

  • Preheat your oven: Set your oven to 200°C (400°F) and line a baking sheet with parchment paper or lightly grease it.

  • Prepare the cauliflower: Trim the leaves and cut off the bottom of the stem so the cauliflower can sit flat. Be careful not to cut too much, or it will fall apart. Rinse and pat dry.

  • Make the spice rub: In a small bowl, mix together the olive oil, cumin, coriander, smoked paprika, turmeric, salt, and pepper. Adjust seasoning to taste.

  • Coat the cauliflower: Rub the spice mixture all over the cauliflower, making sure to cover it thoroughly, including the underside.

  • Roast the cauliflower: Place the cauliflower on the prepared baking sheet and roast for 40–50 minutes. The cauliflower should be golden and tender when pierced with a fork.

  • Finishing touches: Once roasted, remove from the oven and squeeze lemon juice over the top. Garnish with fresh herbs and optional toppings like a tahini drizzle, pomegranate seeds, or toasted nuts for an extra burst of flavor.

  • Serve and enjoy! Slice it like you would a cake and enjoy with your favorite dips or alongside roasted vegetables, grains, or salads.
