Creamy Rainbow Chard & Beetroot Greens Gratin

At ForestFoods, our commitment to zero waste and regenerative farming continues to evolve—most recently with the launch of our Solutions Kitchen at our Tatu City farm. This next step allows us to extend the life of our harvests and enhance our new Fresh2Go line by creating convenient, delicious products like ready-to-cook fresh cut packs.


From the moment we harvest, every piece of produce is carefully graded based on visual appearance—not on taste or nutrition. Grade A produce is selected for its flawless look. If a vegetable’s leaves show minor cuts, it is classified as Grade B. If the leaves have both slight cuts and lighter-than-standard weights, they are classified as Grade C. Importantly, these are only aesthetic differences. Whether Grade A, B, or C, all our produce offers the same vibrant flavor and rich nutrient content


This creamy gratin features our Fresh2Go Rainbow Chard and Beetroot Leaves, regeneratively grown and freshly harvested. Thanks to the Solutions Kitchen, these nutrient-rich greens are prepared just steps away from where they are grown, in a facility designed for maximum freshness and efficiency.

Servings: 6 servings

Prep Time:20 minutes 

Cook Time:35-40 minutes



Ingredients:


  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 pack Rainbow Chard Fresh Cut Pack- washed, chopped and ready to cook (stems and leaves separated)

  • 1 pack Beetroot Leaves Fresh Cut Pack- washed, chopped and ready to cook  (stems and leaves separated)

  • 2 tablespoons all-purpose flour

  • 1½ cups low-fat milk (or unsweetened plant-based milk)

  • ¼ cup Greek yogurt (or plant-based yogurt alternative)

  • ½ teaspoon ground nutmeg

  • Salt and freshly ground black pepper, to taste

  • ¼ cup grated Parmesan cheese (optional or reduced from traditional amount)

  • ¼ cup breadcrumbs or nutritional yeast for topping

  • 1 tablespoon butter or plant-based spread, melted

Instructions:


  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add onion and cook until translucent, about 5 minutes.

  3. Add garlic and cook for 1 minute more.

  4. Stir in chopped stems from the ForestFoods rainbow chard and ForestFoods beetroot greens; cook for 3–4 minutes to soften.

  5. Add the leaves, cooking until wilted, about 2–3 minutes. Season with salt, pepper, and nutmeg.

  6. Sprinkle in flour and stir constantly for 1–2 minutes to remove the raw taste.

  7. Gradually add milk and stir until the mixture thickens, about 5–7 minutes.

  8. Stir in Greek yogurt and half of the cheese, if using. Remove from heat.

  9. Transfer to a greased baking dish.

  10. In a small bowl, mix breadcrumbs (or nutritional yeast), melted butter, and remaining cheese. Sprinkle on top.

Bake for 20–25 minutes or until golden and bubbly. Let cool slightly before serving.
