In this recipe, we’ve created a simple yet flavor-packed Sautéed Leafy Greens Medley that brings together the best of this season’s bounty. It’s a dish designed to complement your lifestyle—quick to prepare, deeply nourishing, and full of earthy, satisfying flavor.
Servings: 4
Prep Time:10 minutes
Cook Time:10 minutes
Ingredients:
1 tablespoon olive oil
2 cloves garlic, minced
1 bunch ForestFoods spinach, washed and chopped
1 bunch ForestFoods chard (rainbow or Swiss), stems removed and leaves chopped
1 bunch ForestFoods pak choi, chopped
Salt and freshly ground black pepper, to taste
1 tablespoon fresh lemon juice
Optional: a pinch of red pepper flakes for heat
Instructions:
Prepare the Greens: Wash all the leafy greens thoroughly to remove any dirt. Chop them into bite-sized pieces, keeping them separate as they have different cooking times
Sauté Garlic: In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it
Cook Chard and Pak Choi: Add the chopped chard and pak choi to the skillet. Sauté for about 3-4 minutes, stirring occasionally, until they begin to wilt
Add Spinach: Add the spinach to the skillet and continue to sauté for another 2-3 minutes until all the greens are tender and wilted
Season: Season the greens with salt, freshly ground black pepper, and red pepper flakes if using. Stir well to combine
Finish with Lemon Juice: Remove the skillet from heat and drizzle the fresh lemon juice over the sautéed greens. Toss to combine
Serve: Transfer the sautéed greens to a serving dish and enjoy warm as a side dish or over grains like rice or quinoa for a light main course

Why This Recipe Works:
This Sautéed Leafy Greens Medley brings together a nutrient-rich combination of spinach, chard, and pak choi—all ingredients that are currently in season, in abundance and cultivated through regenerative farming practices in abundance at ForestFoods. Each green adds its own texture and flavor: spinach lends a soft earthiness, chard offers a slightly sweet, mineral-rich bite, and pak choi introduces a mild crunch. These greens are grown in soil-rich systems supported by syntropic agroforestry—a method that mimics natural forest succession to build soil health, increase biodiversity, and yield nutrient-dense crops. This approach not only enhances flavor and freshness but supports climate resilience and long-term sustainability.
What truly makes this recipe shine is its balance of simplicity and nourishment. It’s quick to prepare, especially when using our Fresh2Go fresh-cut packs, which take the hassle out of washing and chopping greens. These pre-packed greens allow you to focus on cooking and enjoying your meals without compromising on freshness or nutrition.
Leafy greens are an excellent source of vitamins A, C, and K, as well as iron and calcium. When lightly sautéed, they retain most of their nutritional value, while the addition of garlic and lemon juice enhances both flavor and the body’s ability to absorb certain nutrients, such as iron.
This dish is adaptable, pairs well with many proteins or grains, and highlights the value of eating with the seasons. It’s simple, wholesome, and perfectly aligned with sustainable, practical home cooking.
Perfect Pairings
Grains: Serve with quinoa, millet, or brown rice for a nourishing vegetarian meal. These grains add fiber and protein, complementing the greens’ flavor and texture.
Proteins: Pair with grilled chicken, roasted fish, or a soft-boiled egg for a hearty, balanced plate.
Wraps & Bowls: Use the sautéed greens as a filling for wraps or as a warm base in grain bowls for easy meal prep.
Flavor Enhancers: Add lemon zest, toasted seeds, or crumbled feta for extra flavor and texture contrast.
