Ingredients

  • 1 bunch ForestFoods pak choi, washed and chopped

  • 300g chicken breast or thigh (or use firm tofu for a vegan option)

  • 2 tablespoons sesame oil (divided)

  • 2 cloves garlic, minced

  • 1-inch piece fresh ginger, finely grated

  • 2 tablespoons gochujang (Korean chili paste) or 1 tablespoon chili flakes (adjust to taste)

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey or maple syrup (use maple syrup for the vegan option)

  • 1 teaspoon toasted sesame seeds

  • 1 large ForestFoods leek, sliced thinly (white and light green parts)

  • 1 tablespoon chopped spring onions (optional garnish)

  • Steamed jasmine rice or noodles for serving

Instructions

  • Marinate the Chicken or TofuIn a bowl, mix 1 tablespoon of sesame oil, gochujang, soy sauce, honey or maple syrup, rice vinegar, black pepper, garlic, and ginger. Add the chicken or tofu to the marinade, ensuring all pieces are well coated. Let it sit for 15-20 minutes to absorb the flavors.

  • Cook the Chicken or TofuHeat 1 tablespoon of sesame oil in a large pan over medium heat. Add the marinated chicken and cook for 6-8 minutes until fully cooked and lightly caramelized. If you're using tofu, cook the tofu cubes for the same amount of time, turning occasionally until golden and crispy on all sides. Once done, remove and set aside.

  • Stir-Fry the VegetablesIn the same pan, add the sliced leeks and sauté for 2-3 minutes until soft and slightly caramelized. Add the pak choi and continue stir-frying for another 2-3 minutes until the leaves are wilted but the stems remain crisp.

  • Combine and ServeAdd the cooked chicken or tofu back into the pan with the leeks and pak choi. Stir everything together for 1-2 minutes to blend the flavors. Drizzle with a little more sesame oil if desired. Serve over steamed jasmine rice or noodles and garnish with toasted sesame seeds and chopped spring onions.
