Instructions:

Prepare the Sweet Potatoes: While the amaranth cooks, boil the diced sweet potatoes in water for about 10 minutes or until tender. Drain and mash the sweet potatoes until smooth.
Sauté Aromatics: Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté the chopped onion and garlic until soft, then stir in the ground cumin and smoked paprika to enhance the flavors.
