  • ½ cup breadcrumbs (or almond flour for a gluten-free version)

  • Olive oil for frying


Instructions:

  1. Cook the Amaranth: Begin by bringing 2 cups of water to a boil in a small pot. Add the rinsed amaranth, reduce heat, cover, and simmer for 20 minutes or until the amaranth becomes fluffy and absorbs all the water. Set aside to cool.

  2. Prepare the Sweet Potatoes: While the amaranth cooks, boil the diced sweet potatoes in water for about 10 minutes or until tender. Drain and mash the sweet potatoes until smooth.

  3. Sauté Aromatics: Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté the chopped onion and garlic until soft, then stir in the ground cumin and smoked paprika to enhance the flavors.

  4. Mix it All Together: In a large bowl, combine the cooked amaranth, mashed sweet potatoes, sautéed onions and garlic, fresh parsley, and the optional egg for binding. Add salt and pepper to taste. Stir in breadcrumbs or almond flour until the mixture holds together and can be shaped into patties.

  5. Shape the Patties: Form the mixture into small patties. If the mixture is too wet, add a bit more breadcrumbs to help bind.

  6. Fry the Patties: Heat a tablespoon of olive oil in a skillet over medium heat. Fry each patty for about 3-4 minutes on each side until crispy and golden brown.

  7. Serve and Enjoy: These flavorful patties pair perfectly with a fresh salad, a dollop of yogurt sauce, or even an avocado dip. They're ideal as a light meal or a delicious side dish!
